Barbados Cherry Bread and Butter Pudding

Ann Dickson won the Wide Bay Branch Christmas cooking competition with this delicious bread and butter pudding

Ingredients
1 1/2 cups milk
2 eggs
1 tsp vanilla
2 tbspns sugar
Bread
Butter
Barbados Cherry Jam (see below)

Instructions
Beat together the milk, eggs, vanilla and sugar.
Slice enough brad to cver the bottom of the dish. Fruit Loaf is nicest Spread with jam.
Pour liquid over and stand for half an hour
Bake 40 minutes in a moderate oven.

Barbados cherry jam
Mix barbados cherries and a little water. 
Bring to the boil. 
Separate out the seeds (extremely fiddley)
Mix equal quantitites of pulp and sugar, boiled until set.
