Yellow Mangosteen Pie

Jenny Tait prepared this pie for the Christmas party for the Wide Bay Branch 2005.

Ingredients
125 gms butter
1 egg
1/2 cup sugar
2 and 1/2 cups wholemeal SR flour

10 mangosteens
2 cups sugar
1/4cup water
cornflour for thickening

2 cans of coconut cream
1/2 cup sugar
cornflour for thickening

Instructions
Place butter and sugar in microwave for one minute. Cool, beat in egg. Add flour. A little water may be necesary. Place in pie dishes. Bake in medium to hot oven. Cool.

Wash and peel Mangosteen. Cut slices away from seed and place in saucepan with water and sugar. Bring to the boil and thicken with cornflour. Cool and place in pie crust. Refrigerate.

Place coconut cream and sugar in saucepan. Bring to boil and add cornflour for thickening. Cool. Place on top of Mangosteen layer. Refirgerate for at least an hour. Makes two pies. Serve
