Guada Bean with Cheese

Guada Beans grow well in the tropics in place of Zucchini which gets attacked by mould. This recipe was created on the spur of the moment with the ingredients which came to hand. 

Ingredients
1 or 2 large guada beans
Onion finely chopped
A dash of olive oil
Grated ginger
Garlic clove chopped
Maybe a bit of chopped chilli
Mozzarella cheese

Instructions
1. Fry the onion, garlic, ginger and chilli in the olive oil, until onion is clear.
2. Slice the guada bean into diagonal slices and add to the onion.
3. Lightly fry in the oil until the bean is soft – add a bit of water if necessary.
4. Place mixture into baking dish and sprinkle with mozzarella cheese across the top.
5. Bake in a medium oven until cheese has melted.
